Awesome Mango Salsa

This month I am going to share one of my favorite recipes—it’s not exactly a typical “dinner,” but if you have ever had just chips and salsa for dinner or you just want to be a hit at the next party, then this one is for you. My only advice is if you find it hard to find a good ripe mango, Trader Joe’s organic frozen mango chunks work great and taste fantastic every time. Just let them thaw a little bit and then cut into smaller pieces. This salsa is super easy and tastes so fresh. It is even better the next day and will stay fresh in refrigerator for a good five days. Get ready because when you make this people will ask you for the recipe.

Ingredients

1 ripe mango, diced (or, half a bag of Trader Joe’s frozen mango)

1 medium sweet onion, diced

1 lime, juiced

½ cup chopped cilantro (adjust more or less for your taste)

1 cup of frozen white or yellow corn

1-2 fresh tomatoes, chopped

1 jalapeno, diced (seeds removed)

2 cans of diced tomatoes, with juices

1 can black beans, rinsed and drained

1 teaspoon cumin

½ teaspoon garlic powder

Salt and pepper to taste

2 Tablespoons olive oil

Directions

Combine all ingredients in a large container, mix well and keep in refrigerator until ready to serve. This recipe makes quite a large amount of salsa, plenty for a big party. It is also fantastic on top of grilled fish or shrimp, or even chicken.
