Happy May! It finally feels like we can start planning outdoor gatherings again, with Mother’s Day and Memorial Day picnics just around the corner. This delightful recipe was shared with me by dear friends many years ago, and it has remained a favorite ever since. It’s wonderfully simple to prepare and absolutely delicious—perfect for celebrating special moments or enjoying anytime throughout the year.

Ingredients
- 1 cup water
- ½ cup butter
- 1 cup flour
- 4 large eggs
- 1 8-ounce package cream cheese (softened)
- 1 large box vanilla instant pudding
- 3 cups milk
- 1 8-ounce container Cool Whip
- Chocolate syrup or sauce
Directions
Preheat oven to 400 degrees. Grease a 9” x 13” glass baking pan.
In medium saucepan, melt butter in water and bring to boil. Remove from heat and stir in the flour. Mix in one egg at a time. Spread mixture in pan, covering the bottom and sides evenly. Bake for 30 minutes (don’t overbake) until golden brown. Remove from oven and cool.
For the filling: whip cream cheese in bowl. In separate bowl mix milk and pudding, then slowly mix into cream cheese. Let cool in fridge. When the crust is cooled, pour filling in.
Top with layer of Cool Whip however thick you want it and serve with chocolate syrup.
