I’m still not sure who “Lucy” was but it’s still what we all call it. The best part is this salad, it stays fresh in the fridge for days! Enjoy!
Ingredients
2-3 cans green or yellow beans
4 carrots sliced and cooked
4 stalks celery, sliced
½ medium green pepper, cut in half rings
1 small can pimento, chopped
1 medium onion, sliced and separated
2 C vinegar
1tsp salt and pinch garlic salt
1 ½ C sugar
1 tsp Accent
Combine vegetables. Heat vinegar, salt, sugar, accent, and garlic salt to the boiling point. Pour the hot mixture over the vegetables. Chill. Serves 12.
