HeMan Chocolate Chip Cookies

Anytime is cookie time! This recipe was one of my mom’s favorites, and likewise one of my kids’ favorites, especially Mike. She always had tins filled with freshly baked cookies ready for their school lunches or to share with their soccer teams or for dessert. As much as I miss them both, I am pleased to honor both my mom and my son with this recipe. Just think, he is enjoying her cookies again!

HeMan Chocolate Chip Cookies

1 cup shortening

¾ cup brown sugar

¾ cup white sugar

2 eggs, unbeaten

2 teaspoons vanilla

1 tablespoon hot water

2 cups quick-cooking oats

1-1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup chopped nuts

12 oz. package chocolate chips

Preheat oven to 375 degrees. Cream shortening and sugars together. Add wet ingredients and mix well. Gradually add in oats, flour, soda and salt. Fold in nuts and chocolate chips. Drop walnut-sized balls of dough onto ungreased cookie sheets. Flatten and round out the cookies slightly with moist fingers. Bake 10-12 minutes.
